Banana Muffin


๐Ÿ“ŒRECIPE๐Ÿ“Œ


-Chopped 85% Natural Bites Dark Chocolate ๐Ÿซ
-3 medium or 2.5 large bananas
-1 egg
-1 medium zucchini (grated)
-1 1/4 cup oat flour
-1/2 cup peanut butter
-2 tbsp honey (of more to taste)
-2 tbsp coconut cream (or high fat milk)
-1 tsp baking soda
-1/2 tsp baking powder
-1/2 tsp sea salt
-1 tsp vanilla extract


๐ŸŒhow-to๐ŸŒ


-preheat the oven to 220C
-mash the bananas in a bowl and add egg, zucchini, honey, vanilla, and coconut milk
-for the peanut butter, i like to add 1/2 the amount in the batter and swirl the other half on top of the muffins
-mix all the rest of the ingredients (flour, salt, baking powder/soda)
-add the dry ingredients to the wet ingredients and mix well, then add in chocolate
-put in the oven for 5 mins then lower the heat to 170C for 13-15 mins
